Ingredients:
1 tablespoon freshly grated ginger2 teaspoons chopped chilli
1 tablespoon lime juice
1 tablespoon soy sauce
2 teaspoons sugar
4 x 150g salmon fillets
2 cups snow peas
1 red onion, finely sliced
2 carrots, cut into thin sticks
1 red capsicum, thinly sliced
40 g (2 tablespoons) Flora pro-activ

400g rice noodles, prepared according
to pack directions
1 cup coriander leaves
Method:
step 1: Preheat oven to 200°C. Combine ginger, chilli, lime, soy sauce and sugar. Place fish into a ceramic dish, add ginger mixture and allow to marinate for 10-15 minutes.step 2: Place a large sheet of baking paper on a baking tray and arrange the vegetables over it. Dot with Flora pro-activ, place salmon on top and pour over any remaining marinade.
step 3: Bake for 20-25 minutes, or until salmon is just cooked. Serve fish and vegetables on a bed of noodles and pour over the juices from the fish. Garnish with fresh coriander.
Hint: Also delicious made with other firm fish fillets. Adjust the cooking time according to the thickness of the fillets.
